If you want to taste a feast of the paradise, Kashmiri Food Festival at Hyatt Regency Kolkata from 2-15 August is the place to be. The best of Kashmiri recipes at Hyatt are served only during dinner and the menu is wide and varied to leave your taste buds wanting for more.

I think I should reveal this to my readers. My last two attempts to visit Kashmir – Srinagar, Gulmarg, Sonmarg and Pahalgam – have been unsuccessful. My first attempt was from New Delhi in 2014-15, a place where I used to stay before coming to Calcutta. I had booked a flight to visit Kashmir but never got to visit it due to some unavoidable circumstances. Meanwhile, I also have an invitation to visit a luxury hotel in Srinagar this month, which accidentally got postponed by the hotel for next month. However, here’s my destiny. I got invited by Hyatt Regency Kolkata for fabulous Kashmiri Food Festival.

The Kashmiri food I had at Hyatt was delicious to say the least – Mutton Rogan Josh, Kashmiri Pulao, Sheek Kabab or the Kava Tea (with saffron and hot spices – I’m told that the best saffron is sourced from Sonmarg). Chef Uttam who prepared the menu for the festival said to Blackboard: “We have maintained to keep the essence of Kashmiri food in our recipes. Our ingredients and cooking style have been aligned to the Kashmiri food recipes – for both our vegetarian and non-vegetarian dishes.”
